I did some greenscreen headshots in the past, and the hair is a nightmare indeed. Guessed white background would have been better with respect to some colorcast, but after seeing these I'm not sure white would have made it any easier.

In your second photo with the white background (the woman), on my monitor I see greyish areas, mostly in the left upper corner of the photo. Cleaning up background sometimes is challenging and depending on monitors you still see some what you don't see on other monitors. So I just mentioned it. What I did when cleaning up the greenscreens, was using several solid colors layers in photoshop below the actual photo. Masking/ erasing the background then makes the solid color visible. Using different colors (hide one layer, show another) shows different artifacts sometimes, due to difference in contrast. Once done with masking I deleted the solid color layers.

I was so concentrated on her hair that I missed that completely. But I've had my morning coffee and I'm seeing much clearer now! :D

Wouldn't it be just simpler to put them in front of a nice background so there's nothing to clean up? I know there are those big, foldable thingies. I have small versions of them for tabletop stuff. A question from someone who never did head shots.

Depends on the purpose of the photos whether or not a nice background is a better option. From the photographers perspective it sure is. I did green screen headshots for the company I work for, where it was wanted to have a 'serious' photo and a photo holding an attribute telling something about the person. Depending on the style of the website, which was the case then, we wanted different background for the two photos. In addition to that it was envisioned that the photos might be used in other corporate material like brochures.
I opted for green screen as it gave the opportunity to free the subject from the background and thereafter use a background appropriate to the website style of use the photo with a transparent background. Also available space in the office did suffice to build up two sets and it was useful when the photo process was repeatable for new employees.

My avatar photo here on the forum was the 'hobby' photo for me for the website. The background with lightning bolts I used for personal purposes, for the website another background was used.
 
Changing background colors - using CaptureOne Pro is as simple as a click and select a color. PS now has simpler ways of selecting and changing background colors.

Here’s Capture One took less than a minute to swap. Note the full length - shadows are also addressed. If I took a minute more, could have easily refined the full-length shot (white skirt area). Change to blue background to lift the yellow off her sweater. Complimentary colors…. Yes, I know headshots, but example for shadow colors for editing.
